Chocolate Peanut Butter Cookie Dough cupcake with Marshmellow Meringue Frosting!!!
Found this great recipe which has all my fav ingredients, choc-peanut butter and meringe YUM!
Super easy, all you need is:
Base
Ready mix (chocolate cake)
Peanut butter (1/2 cup mix in with the batter)
Filling
Ready packed cookie dough
Frosting
4 large egg whites
1 1/2 cups granulated sugar
1/2 cup light corn syrup
large pinch of salt
2 teaspoons pure vanilla extract
Meringue Frosting Mixture
- whisk together egg whites, sugar, corn syrup and salt.
-Place bowl over simmering water and whisk as it heats.(double boiler)
(in 5 mins the sugar should melt, make it sure you dont cooke the egg white)
-With a whisk attachment, beat the egg whites, on high, until stiff peaks form (about 5 minutes) The mixture will be fluffy and glossy and look like melted marshmallows.
- add vanilla extract last to the mixture
-Cover, and set aside until ready to frost cupcakes.
Steps
1-Pour the cake mix into the individual cupcake bake tray & bake
2- Make a hole in the middle top of the cupcake (don't hollow it out of cut the top part of the cupcake)
3- Create small walnut-size cookie-dough balls and place in the small hole, where by the cookie-dough ball can sit put and the rest of it is exposed.
4-Add the meringue mix into a piping bag, start piping around the outer corners, working your way in, creating cone like-tip.
5-Place the cupcakes on an oven broiler until its toasted, you can also toast it with a torch.
